Cleaning schedule sign-off
A written cleaning schedule covering every area — kitchen, bar, front of house, toilets, storage — with a named person initialling each task as it is done, every day.

Cleanliness is one of the headline scores an EHO rates you on. Without a signed schedule you are relying on memory to prove a deep clean happened this morning rather than some vague point last week.
WHEN
Every day, each task ticked off as it is done — not filled in at the end of the shift from memory.

WHO DOES IT
A document you write
LEGAL BASIS
Part of your food safety management system's cleaning schedule requirement under Regulation (EC) 852/2004, Annex II.
Who this is for
Every venue.
What you’ll hold
- Daily cleaning schedule, signed off by area
Watch out for
- One person signing off areas they did not actually clean, because "it is always fine".
- A schedule that lists rooms but not specific tasks — "kitchen" instead of "clean and sanitise all prep surfaces" — too vague to check against.
- No line for the things that get forgotten: extraction canopy exterior, door handles, bins, under equipment.
